Good recipes are important, but greatness can only be achieved through the mastery of technique.  In this class we’ll focus exclusively on one of the essentials of home cooking: chicken. 

We’ll start with whole chickens, teaching you how to break them down into 8 parts (a skill that will both save you money and make you feel like a master chef).  From there you’ll learn to debone it, truss it, roast it, grill it, and use it to create any number of delicious dishes.  Chicken Piccata ( brown butter, caper and lemon) Pollo Arrosto ( lemon, garlic  and oregano ) and Chicken Chimichurri with Roast Tomatoes.
