For true pasta aficionados, nothing compares to fresh egg pasta, made from scratch. Learn how to bring that delicious goodness home thanks to the chef instructors at Little Fox Kitchen. Our chef director has divided the course into two series according to the seasons, Pasta Fresca: Spring/Summer and Pasta Fresca: Fall/Winter, allowing our menus to reflect the bounty of seasonal produce available for creating fresh, sumptuous dishes. Get truly hands-on while crafting sfoglie (pasta sheets) using a matarello (rolling pin), producing companion sauces, and learning to form the dough into different pasta shapes including tagliatelle, filled tortelloni, and farfalle (little butterflies). Dishes created—and sampled!—will include ragu alla bolognese ,tortelloni burro e salvia (tortelloni with fresh ricotta and parmiggiano reggiano, parsley, and with sage butter ), farfalle con pomodori arrostiti e pancetta (butterfly-shaped pasta with roasted tomatoes and pancetta.
