DECEMBER 15, SATURDAY | 10:30 am-2:00pm

Join Chef Kathryn Gordon author of Les Petits Sweets and Les Petite Macaron to bake a delicious classic:  Croquembouche. This festive tower will adorn your holiday tables (and is the wedding cake in France).  You will learn how to make the paste to pipe the cream puffs, pâte à choux. Then we will make the filling, crème patisserie (pastry cream, or pudding). While the cream is cooling, we will learn how to (safely) cook a caramel to assemble the tower and learn to make colorful craquelin.  Chef Kathryn will help each participant to assemble their own small croquembouche -- or work with a friend to make a taller tower!

The book Les Petits Sweets is not included in the fee but will be available for sale at $18 (cash).
